We recently completed a bay window shutter installation in Kirby Muxloe — white plantation shutters across a splay bay, with the louvres open for daylight and street privacy when they are tilted.
The spec
A splay bay is several flat sections set at an angle, not one curved pane. Each shutter panel is made for its own section so the frame follows the bay instead of sitting square across it. Louvres then do the day-to-day work: open for the view, tilted when you want privacy from the road.
This opening is a conventional splay bay. Where a window is arched or pointed, the same made-to-measure approach applies — see arched and shaped window shutters.
The install

A second view of the same bay, with the louvres still open across the front and the angled side sections.
